Ingredients:
For the Hummus:
- 2 cups dried chickpeas
- 1 teaspoon baking soda (for soaking)
- 1/2 teaspoon baking powder (for boiling)
- 6-8 cups water
- 1 teaspoon salt
- 3/4 cup tahini (use high-quality tahini for the best results)
- 5 tablespoons fresh lemon juice
- 3 garlic cloves, minced
- 1 teaspoon cumin
- 6 ice cubes
- Reserved chickpea water (optional, for consistency adjustment)

- Cherry tomatoes
- Crumbled feta
- Roasted red peppers
- Radish slices
- Broccolini
- Za’atar chips
Instructions:
- Soak the Chickpeas:
- In a large bowl, combine 2 cups dried chickpeas with 1 teaspoon baking soda and cover with water. Soak overnight or for at least 8 hours.
- Cook the Chickpeas:
- Drain the soaked chickpeas and rinse. In a pot, bring 6-8 cups of water to a boil and add the chickpeas along with 1/2 teaspoon baking powder.
- Skim off any foam that rises to the surface and reduce the heat. Cover and simmer for 30 minutes.
- Add 1 teaspoon of salt and cook for an additional 10 minutes or until the chickpeas are tender. Drain and allow to cool slightly.
- Remove the Skins:
- For extra smooth hummus, gently rub the chickpeas between your fingers to remove their skins. It doesn’t have to be perfect, but it makes a difference in texture.
- Blend the Chickpeas:
- Add the cooked chickpeas to a food processor and blend continuously until they form a smooth paste. Scrape down the sides as needed.
- Add Flavor:
- Add the tahini, lemon juice, garlic, cumin, and salt to taste. Blend again, gradually adding 6 ice cubes for an ultra-creamy texture.
- If the hummus is too thick, add a bit of reserved chickpea water until it reaches your desired consistency.
