This Hummus Extravaganza isn’t just a recipe—it’s an experience. Made with dried chickpeas, creamy tahini, and just the right balance of lemon, garlic, and spices, this hummus delivers restaurant-quality flavor every time. Perfectly smooth and bursting with flavor, it’s the ultimate centerpiece for a decorative platter that will wow both kids and adults alike.

Ingredients:

For the Hummus:

  • 2 cups dried chickpeas
  • 1 teaspoon baking soda (for soaking)
  • 1/2 teaspoon baking powder (for boiling)
  • 6-8 cups water
  • 1 teaspoon salt
  • 3/4 cup tahini (use high-quality tahini for the best results)
  • 5 tablespoons fresh lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon cumin
  • 6 ice cubes
  • Reserved chickpea water (optional, for consistency adjustment)

Optional Garnishes:

  • Cherry tomatoes
  • Crumbled feta
  • Roasted red peppers
  • Radish slices
  • Broccolini
  • Za’atar chips

 

Instructions:

  1. Soak the Chickpeas:
    • In a large bowl, combine 2 cups dried chickpeas with 1 teaspoon baking soda and cover with water. Soak overnight or for at least 8 hours.
  2. Cook the Chickpeas:
    • Drain the soaked chickpeas and rinse. In a pot, bring 6-8 cups of water to a boil and add the chickpeas along with 1/2 teaspoon baking powder.
    • Skim off any foam that rises to the surface and reduce the heat. Cover and simmer for 30 minutes.
    • Add 1 teaspoon of salt and cook for an additional 10 minutes or until the chickpeas are tender. Drain and allow to cool slightly.
  3. Remove the Skins:
    • For extra smooth hummus, gently rub the chickpeas between your fingers to remove their skins. It doesn’t have to be perfect, but it makes a difference in texture.
  4. Blend the Chickpeas:
    • Add the cooked chickpeas to a food processor and blend continuously until they form a smooth paste. Scrape down the sides as needed.
  5. Add Flavor:
    • Add the tahini, lemon juice, garlic, cumin, and salt to taste. Blend again, gradually adding 6 ice cubes for an ultra-creamy texture.
    • If the hummus is too thick, add a bit of reserved chickpea water until it reaches your desired consistency.
  6. Serve and Garnish:
    • Transfer the hummus to a serving dish and drizzle with olive oil. Garnish with cherry tomatoes, crumbled feta, or your favorite toppings for a vibrant presentation.
