Ingredients:

  • 2 tbsp coconut oil
  • 1 tbsp beef tallow (for cooking sirloin steak)
  • 1 large red pepper, thinly sliced

  • 1 tsp fresh ginger, grated
  • 2 tbsp Thai red curry paste (or less if you prefer a milder flavor)
  • 1 can coconut milk
  • 4 cups beef bone broth (or vegetable broth for a lighter option)
  • 200g spelt noodles
  • Sirloin steak, thinly sliced
  • Salt and pepper to taste
  • Fresh corriander (for garnish, optional)

Instructions:

  1. Cook the Vegetables:
    • Heat the coconut oil in a large pot over medium heat. Add the onion and red peppers and cook for 5-7 minutes, until softened.
    • Add the garlic and ginger and cook for an additional 3-4 minutes, stirring occasionally.
    • Stir in the Thai red curry paste and cook for 1 minute to let the flavors develop.
  2. Add the Liquids:
    • Stir in the coconut milk and then add the beef broth, followed by the lime juice, fish sauce, and lime leaves.
    • Bring to a simmer and let it cook for about 10 minutes, allowing the flavors to meld together.
  3. Cook the Steak:
    • While the soup is simmering, heat beef tallow in a separate pan over medium-high heat.
    • Sear the sirloin steak for about 3 minutes on each side, adding any fat from the steak (like oil) to the pan as you cook it. Avoid putting any fat directly in the pan.
    • Once the steak is done, remove it from the pan and let it rest for a few minutes before slicing it thinly.
  4. Cook the Spelt Noodles:
    • Cook the spelt noodles according to the instructions on the package. Once cooked, drain and set aside.
  5. Assemble the Soup:
    • In serving bowls, add a portion of the cooked spelt noodles.
    • Ladle the hot soup over the noodles, and then top with the sliced steak.
    • Garnish with bean sprouts, chopped spring onions, fresh coriander, and sliced red chili pepper if desired.
