  2. Sear the Chicken:
    • Heat 1 tablespoon of beef tallow in a large sauté pan over medium-high heat.
    • Sear the chicken pieces for 6-8 minutes on each side until golden. Remove and set aside.
  3. Cook the Aromatics:
    • In a large pot, heat the remaining 1 tablespoon of beef tallow over medium heat.
    • Sauté the onion for about 5 minutes until translucent. Add the crushed garlic and cook for another 2-3 minutes until fragrant.
  4. Simmer the Chicken:
    • Return the chicken to the pot. Add 1/2 cup of water (or chicken broth), bring to a boil, then reduce the heat to low.
    • Cover and simmer for 45 minutes.
  5. Prepare the Apricot Sauce:
    • In a separate small pot, combine dried apricots, 1 cup of water, saffron threads, and the cinnamon stick.
    • Simmer for 15-20 minutes until the apricots soften and the sauce is fragrant.
  6. Combine and Finish:
