Greek Lamb Wrap
This Greek Lamb Wrap is one of my favorite low-carb meals, especially when I’m looking for something quick, healthy, and satisfying. Lamb is a fantastic choice of meat—it’s lean, packed with protein, and loaded with essential nutrients like iron and zinc to support overall health. Ingredients:
For the Lamb:
- 500g lamb, finely chopped
- 2 garlic cloves, minced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon cinnamon
- 1/2 teaspoon paprika
- 1 tablespoon beef tallow (or olive oil)
For the Greek Salad:
- 2 tomatoes, diced
- 1 cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1 tablespoon olive oil
- 1 teaspoon vinegar
- 1 teaspoon dried oregano
For the Wrap:
- Lettuce leaves (large, for wrapping)
- Tzatziki sauce (optional, for serving)
Instructions:
- Marinate the Lamb:
- In a bowl, combine the lamb, minced garlic, garlic powder, salt, and pepper. Mix well and let it marinate for at least 30 minutes to enhance the flavors.
- Cook the Lamb:
- Heat a skillet over high heat and add the beef tallow.
- Once hot, add the lamb and cook for 5-8 minutes, stirring frequently, until it becomes crispy and fully cooked.
- Sprinkle in the cinnamon and paprika, stirring well to coat the lamb evenly with the spices around 3 minutes after placing the lamb in the skillet.
- Prepare the Greek Salad:
- In a separate bowl, combine the diced tomatoes, cucumber, and crumbled feta cheese.
- Drizzle with olive oil and vinegar, then sprinkle with dried oregano. Toss gently to mix.
- Assemble the Wraps:
- Lay out the lettuce leaves and fill them with a spoonful of the Greek salad.
- Add a generous portion of the cooked lamb on top.
- Optionally, drizzle with tzatziki sauce for added creaminess.
- Serve:
- Wrap the lettuce around the filling and serve immediately. These wraps are best enjoyed fresh and warm.
