Shawarma Like No Other

No joke—this might just be the best Chicken Shawarma out there! Not to brag, but anyone I’ve served this to has had an “OMG” moment. The key to its irresistible flavor? Letting the chicken marinate—the longer, the better. The combination of spices, yogurt, and olive oil ensures tender, flavorful chicken with those delicious crispy bits we all love.

Ingredients:

For the Chicken:

  • 2 chicken breasts, cut into thin, long slices
  • 1 tomato, chopped small for marination and 1 sliced into rounds for grilling
  • 1 onion, sliced into thin rings
  • 3 small garlic cloves, minced
  • 1 teaspoon cinnamon
  • 1 teaspoon seven spices
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • Salt, to taste
  • 2 tablespoons yogurt (any type you prefer)
  • 1 tablespoon olive oil

For the Garnish:

  • Pickles, chopped
  • Fresh parsley, chopped
  • Onion rings, lightly sautéed
  • Sumac, for sprinkling

 

Instructions:

  1. Marinate the Chicken:
    • In a large bowl, combine the chicken slices, minced garlic, cinnamon, garlic powder, black pepper, salt, yogurt, chopped tomato, and olive oil.
    • Mix until the chicken is evenly coated. Cover the bowl and marinate for at least 2 hours, or longer for deeper flavor.
  2. Prepare the Garnish:
    • In a small bowl, combine the chopped pickles, parsley, and lightly sautéed onion rings. Sprinkle with sumac and set aside.
  3. Grill the Tomatoes:
    • Slice the remaining tomato into rounds and grill on medium-high heat until slightly softened and charred. Set aside.
  4. Cook the Chicken:
    • Heat 1 tablespoon of oil in a pan over medium-high heat. Add the marinated chicken slices and cook for 5-7 minutes, turning occasionally, until thoroughly cooked and slightly crisped on the edges.
  5. Assemble the Shawarma:
    • On a serving platter, place the grilled tomato rounds as a base or layer them inside pita bread or lettuce wraps.
    • Add the cooked chicken slices on top and finish with the prepared garnish.
